24ouncesfull-fat cream cheese680 grams, room temperature
3/4cupgranulated sugar150 grams
1/4cupbrown sugar50 grams
1/2teaspooncinnamon
1tablespooncornstarch or 2 tablespoons all-purpose flour
1teaspoonvanilla extract
1/2cupsour cream120 ml, room temperature
3large eggsroom temperature

Instructions
Preheat the oven to 350°F (180°C or 160°C for a fan-forced oven). Wrap a 9-inch (23-cm) springform pan with foil, covering the bottom and sides at least 3-4 times. Grease the pan with non-stick cooking spray.
Crust: Combine graham crumbs, brown sugar, cinnamon, and melted butter. Press the mixture into the bottom and halfway up the sides of the pan. Bake for 8-10 minutes, then set aside.
Cinnamon Apples: Peel, core, and thinly slice the apples. Toss with brown sugar and cinnamon, then refrigerate.
Crisp Topping: Mix flour, brown sugar, cinnamon, oats, and melted butter until crumbly. Set aside.
Cheesecake Filling: Beat cream cheese and sugars until smooth. Add cornstarch, cinnamon, sour cream, and vanilla. Mix in eggs one at a time until combined.
Assembling & Baking: Pour cheesecake filling over the crust. Arrange apple slices on top, then sprinkle with the crisp topping. Place the pan in a roasting pan, pour boiling water into the roasting pan, and bake for 50-60 minutes.
Cooling & Serving: Cool the cheesecake in the roasting pan to room temperature, then refrigerate for at least 6 hours. To serve, remove from the fridge, slice, and drizzle with salted caramel.
