Ingredients
  

  • 1 pound boneless skinless chicken thighs, chopped
  • 1/4 cup soy sauce
  • 1/3 cup dry sherry divided
  • 2 tablespoons cornstarch
  • 1/3 cup chicken broth
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon ground black pepper
  • 3 large green bell peppers sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 2 teaspoons ginger minced
  • 2 tablespoons oil for frying

Instructions
 

  • Marinate the chicken: In a bowl, mix chicken with 1 tablespoon soy sauce and 1 tablespoon sherry. Let it sit for 30 minutes.
  • Make the sauce: Whisk remaining soy sauce and cornstarch in a small bowl. Add remaining sherry, chicken broth, sesame oil, sugar, and black pepper to the mix.
  • Prep veggies: Combine sliced bell peppers and onion in a bowl. Mix minced garlic and ginger in another bowl.
  • Cook chicken: Heat oil in a pan, add marinated chicken, and cook for 4-5 minutes until no longer pink. Remove chicken.
  • Stir-fry veggies: Add bell peppers and onions to the pan, cook until tender.
  • Finish the dish: Return chicken to the pan, add garlic and ginger, cook for 30 seconds.
  • Add the sauce: Pour in the sauce mixture, cook for 2 minutes to blend flavors.
  • Serve hot over rice or noodles.
