Instructions
Cut both apples into matchstick pieces and place them in a bowl.
Pour lemon juice over the apples and toss to coat evenly. Let them sit for 5 minutes to prevent browning.
In a large mixing bowl, combine matchstick carrots, diced onion, and dried cranberries.
Add the soaked apples to the mixing bowl.
Mix in vanilla yogurt, mayo, sugar, salt, and pepper.
Stir all ingredients together thoroughly.
Add mandarin segments to the salad and mix gently.
Cover the bowl and refrigerate for at least three hours.
