  • 3 1/2 pounds russet potatoes
  • 2 tablespoons kosher salt
  • 16 fluid ounces 2 cups half-and-half
  • 6 cloves garlic crushed
  • 6 ounces grated Parmesan

Instructions
 

  • Peel and dice the potatoes into uniform pieces.
  • Place the potatoes in a large saucepan with salted water.
  • Bring to a boil and then simmer until fork-tender, about 30 minutes.
  • While the potatoes are cooking, heat the half-and-half and garlic in a separate saucepan until warmed through.
  • Drain the cooked potatoes and mash them until smooth.
  • Mix in the heated cream mixture along with the Parmesan cheese, stirring until fully combined.
  • Let the mixture sit for five minutes to thicken before serving.
