Ingredients

  • 4 boneless skinless chicken breasts (8 oz each)
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried parsley
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1/2 cup reduced-sodium chicken broth
  • 5 cloves garlic minced

Instructions

  • Pat the chicken breasts dry with paper towels. Season them with salt, pepper, dried thyme, oregano, rosemary, and parsley.
  • In a large skillet, preferably stainless steel, heat olive oil over medium-high heat. Add the seasoned chicken breasts in a single layer and sear for 4-8 minutes per side until they are golden and just cooked through. If browning too quickly, reduce the heat to medium. Once done, transfer the chicken to a plate and cover to keep warm.
  • Add butter and chicken broth to the same skillet. As the butter melts, use a wooden spoon to scrape the bottom of the pan to deglaze it.
  • Reduce the heat to low. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Return the chicken to the skillet. Flip it once or twice to coat it in the sauce. If necessary, heat for an additional 1-2 minutes until warm.
  • Serve the garlic butter chicken with the pan juices spooned over the top.
