Ingredients
  

  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz 220g pasta (fusilli)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp fennel seeds
  • 1/4 cup vegetable stock
  • 1/2 tsp Cayenne pepper optional
  • 1 cup grated parmesan
  • Fresh basil or parsley
  • 1/2 tsp red pepper chili flakes optional

Instructions
 

  • Cook the pasta al dente in a pot of boiling water following the package instructions.
  • In a large skillet over medium heat, add 2 tbsp of olive oil. Sauté the diced zucchinis until golden, stirring occasionally. Transfer the zucchinis to a plate.
  • In the same skillet, add cherry tomatoes, black pepper, fennel seeds, garlic powder, Cayenne pepper (if using), and vegetable stock. Cover with a lid and cook until the tomatoes blister, stirring occasionally.
  • Push the tomatoes to the side of the pan. Add the cooked zucchinis, pasta, and parmesan. Mix well and reheat for a few minutes, adding more vegetable stock if needed.
  • Serve the tomato zucchini pasta hot, drizzled with olive oil and extra parmesan. Garnish with fresh basil or parsley and red pepper chili flakes if desired. Enjoy!
