Ingredients
  

  • 4-5 pounds boneless skinless chicken thighs
  • 1/2 cup packed light brown sugar
  • 1/2 cup ketchup
  • 1/2 cup light soy sauce
  • 1/2 cup canned pineapple juice
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coarse black pepper
  • 1/2 teaspoon paprika smoked or sweet
  • 1 pineapple or 1 can of pineapple slices drained
  • 1/2 cup sliced green onions for garnish

Instructions
 

  • Rinse the chicken thighs and pat them dry.
  • In a large bowl or gallon-sized ziplock bag, mix together all ingredients except for the chicken, including brown sugar, ketchup, soy sauce, pineapple juice, ginger, garlic, apple cider vinegar, cumin, black pepper, and paprika.
  • Set aside 1/2 cup of the sauce for later use.
  • Add the chicken thighs to the remaining marinade, ensuring all chicken pieces are coated. Marinate in the refrigerator for at least 4 hours or overnight.
  • Preheat the grill to medium-high heat (about 400°F) and lightly oil the grates.
  • Place the marinated chicken on the grill without turning or moving for about 10 minutes. Flip and continue grilling until the internal temperature reaches 165°F (approximately 10 more minutes). Discard the used marinade.
  • Halfway through cooking the chicken, grill the pineapple rings until golden on each side.
  • Remove the chicken and pineapple from the grill.
  • Brush the reserved marinade over the chicken. You can thicken the sauce by placing the chicken under the broiler for a few minutes or by heating the reserved sauce in a saucepan on the stovetop until slightly thickened, then brush it over the chicken.

Notes:
For added flavor, you can sprinkle some sesame seeds over the chicken before serving.
