Korean Strawberry Milk

Ingredients
  

  • 1 1/4 cups fresh or frozen strawberries
  • 1/4 cup sugar adjust to taste
  • 3/4 cup fresh strawberries cut into 1 cm or 1/3 inch pieces
  • 2 cups coconut milk or any milk of choice

Instructions
 

  • Puree the 1 1/4 cups of strawberries using a blender, food processor, or masher. If using frozen strawberries, thaw them slightly or use a high-speed blender.
  • In a small pot, combine the strawberry puree, sugar, and one-third of the cut strawberry pieces. Heat until it boils. Let it boil for 1 minute, then turn off the heat and allow it to cool on the counter or chill in the refrigerator.
  • (Note: You can skip the boiling step, but for best results, consume the same day. The puree will be thinner and more watery but will have a fresher strawberry flavor as it's not heated.)
  • Take two 16-ounce glasses. Add half of the cooled strawberry puree and half of the remaining cut strawberry pieces into each glass. Swirl it around the glass to create a pattern.
  • Pour half of your milk of choice into each glass and serve immediately. Optional: top with whipped cream.

Notes:
For a creamier texture, you can blend the milk with the strawberry puree before pouring it into the glasses
