Ingredients
  

  • 6 slices of lemon
  • 1 tbsp lemon juice
  • 2 boneless skinless chicken breasts
  • 2 tsp Italian seasoning
  • 4 large cloves of garlic
  • 2 cups chicken broth
  • 1 1/2 cups cherry tomatoes
  • 3/4 cup uncooked classic quinoa
  • 1/2 tsp table salt plus more for seasoning chicken
  • Pepper for seasoning chicken
  • 1 tsp chopped parsley for garnish

Instructions
 

  • Slice Lemon & Prep: Slice the lemon into six slices, removing the peel and white pith. Place the lemon slices at the bottom of the slow cooker.
  • Season Chicken: Put the chicken breasts over the lemon slices. Season them evenly with salt, pepper, and Italian seasoning.
  • Add Garlic, Salt, Broth: Add the garlic cloves, chicken broth, and table salt into the slow cooker.
  • Cook & Add Ingredients: Cook on low for 5 hours. Around 1.5 hours before serving, mash the garlic cloves in the slow cooker, pour in lemon juice, and add cherry tomatoes and quinoa. Stir well to ensure the quinoa is immersed in the liquid. Increase heat to high.
  • Cook Until Absorbed: Let it cook until the quinoa absorbs all the broth, approximately 1-1.5 hours. Fluff the quinoa with a fork once done. Remove the lemon slices.
  • Serve: Scoop the quinoa and tomatoes into a bowl, place the chicken breasts on top, sprinkle with parsley, and savor!

Notes

Notes: Adjust cooking time if using a deeper oval slow cooker where the chicken may be fully submerged in the broth.
