Ingredients
  

  • 2-3 tablespoons butter softened
  • 2-3 tablespoons unsweetened cocoa powder
  • 1 cup 170 g chopped semisweet or bittersweet chocolate
  • 10 tablespoons salted butter
  • Pinch of salt about 1/8 teaspoon
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 3 large egg yolks
  • 1 1/2 cups 171 g powdered sugar
  • 1/2 cup 71 g all-purpose flour

Instructions
 

  • Preheat the oven to 375-400°F (190-200°C).
  • Grease six 6- or 8-ounce ramekins with butter, then dust with cocoa powder, tapping out the excess.
  • In a medium bowl, melt the chocolate and butter together until smooth. Stir in salt and vanilla, then let it cool to room temperature.
  • Using an electric mixer, beat the eggs and egg yolks until thick and light, about 2-3 minutes.
  • Add powdered sugar, mix well, then add the cooled chocolate mixture and flour. Stir until just combined.
  • Divide the batter among the ramekins and place them on a baking sheet.
  • Bake for 12-13 minutes until the sides are set but the center is still soft.
  • Let the cakes sit for 2-3 minutes, then run a knife around the edges and invert onto plates.
  • Dust with powdered sugar or serve with whipped cream, strawberries, ice cream, or hot fudge sauce.
