No-Bake Oreo Cheesecake

Ingredients
  

  • 24 Oreo cookies crushed
  • 4 tablespoons 56g salted butter, melted
  • 24 oz 680g cream cheese, room temperature
  • 2 teaspoons 10ml pure vanilla extract
  • 2 cups 240g powdered sugar, sifted
  • 2 teaspoons 10ml fresh lemon juice
  • 1 1/2 cups 357g heavy whipping cream, very cold
  • 16 Oreo cookies roughly chopped

Instructions
 

  • Line the bottom of a springform pan with parchment paper.
  • Mix the crushed Oreo cookies and melted butter in a bowl until well combined.
  • Press the mixture into the bottom and 1 inch up the sides of the lined springform pan. Place the pan in the freezer while you prepare the filling.
  • Using an electric mixer, beat the softened cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice. Beat for about 4 minutes until light and fluffy. Set aside.
  • In a separate bowl, whip the cold heavy cream with a whisk attachment until stiff peaks form.
  • Gently fold the whipped cream and chopped Oreos into the cream cheese mixture. Pour the mixture into the crust and smooth it out evenly.
  • Cover the pan tightly with plastic wrap and chill for 5 hours or overnight before serving. Enjoy chilled.

Notes:
For a twist, you can drizzle chocolate sauce or caramel on top before serving.
