skinless chicken breasts, pounded to even thickness

avocado oil or other high-heat oil
Kosher salt and fresh black pepper
Instructions
Whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, Dijon mustard, salt, and pepper in a bowl. Set aside.
In another bowl, combine grape tomatoes, fresh mozzarella, basil, salt, and pepper. Set aside.
Preheat the oven to 400°F.
Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper.
Once the oil is hot, add the chicken to the skillet in a single layer. Cook for 1-2 minutes on each side until lightly golden brown.
Pour the balsamic sauce over the chicken. Let it simmer and scrape up any brown bits from the bottom of the pan.
Remove the skillet from heat and top the chicken with the tomato mozzarella mixture.
Bake uncovered for 18-23 minutes until the chicken is fully cooked (internal temperature of 165°F).
Let it rest for 5 minutes before serving.

For added flavor, you can sprinkle some extra fresh basil on top before serving.
