Ingredients
  

  • 1 lb 450g skinless, boneless chicken breast, cut into 1-inch pieces
  • 2 zucchinis sliced
  • 2 red bell peppers chopped into chunks
  • 1 broccoli crown broken into florets
  • 1/2 onion sliced
  • 1/4 tsp salt and pepper
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1/4 cup 60ml low-sodium chicken broth
  • 1 tbsp fresh chopped parsley for garnish
  • 1/2 tsp red chili pepper flakes optional

Instructions
 

  • Season the chicken: In a large bowl, season the chicken breast cubes with salt, pepper, 1 tablespoon of olive oil, and Cajun seasoning. Toss until well coated.
  • Cook the chicken: Heat a large skillet over medium heat with 1 tablespoon of olive oil. Add the seasoned chicken and cook for 5-7 minutes until fully cooked. Remove the chicken to a plate and set aside.
  • Stir-fry the veggies: In the same skillet, stir-fry the onion for 2 minutes. Add more olive oil if needed, then add broccoli, zucchini, and bell pepper. Season with Cajun seasoning and cook until the vegetables are crisp-tender.
  • Combine and serve: Deglaze the skillet with chicken stock. Add the cooked chicken back to the skillet and mix everything together. Optionally, garnish with red chili pepper flakes and fresh parsley. Serve the Cajun chicken and veggies immediately. Enjoy!
