Ingredients
  

  • ¾ stick 85g unsalted butter
  • 1 cup 200g granulated sugar
  • ¼ cup 55g light brown sugar
  • 3 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • cup 72g / 80ml vegetable oil
  • ¼ cup 25g cocoa powder
  • ¾ cup 90g all-purpose flour
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • ½ teaspoon red food coloring
  • ¾ cup white chocolate chips optional
  • 4 oz 114g cream cheese
  • ¾ stick 85g unsalted butter
  • 4 cups 480g powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (180°C) and line a 9-inch square cake pan with parchment paper.
  • Melt the butter in the microwave in 30-second intervals until fully melted.
  • In a large mixing bowl, combine granulated sugar, light brown sugar, and melted butter. Whisk until well combined.
  • Add eggs, egg yolk, and vanilla. Mix gently to combine without incorporating air into the mixture.
  • Stir in vegetable oil and cocoa powder until fully combined.
  • In a small bowl, mix a portion of the batter with red food coloring until smooth. Add this to the main batter and mix well.
  • Switch to a spatula or wooden spoon and fold in flour, cornstarch, and salt until no lumps remain. Mix in the vinegar.
  • Optionally, add white chocolate chips and fold gently.
  • Pour the batter into the prepared pan and bake for 20-25 minutes until a skewer comes out with moist crumbs.
  • Let the brownies cool completely before frosting.
  • For the cream cheese frosting, beat room temperature butter and cream cheese until smooth.
  • Gradually add powdered sugar, then beat on high speed until light and fluffy.
  • Mix in vanilla extract until combined.
  • Spread the cream cheese frosting over the cooled brownies before slicing.

Notes:
For a richer flavor, you can add chopped nuts or a sprinkle of cocoa powder on top of the cream cheese frosting.
