Roasted Strawberries and Lime Basil Ice Cream

Ingredients
  

  • 2 1/2 cups heavy cream
  • 1 cup whole milk
  • 2/3 cup sugar
  • 2 vanilla beans Tahitian
  • 2 teaspoons corn starch
  • 1/4 teaspoon salt
  • 17.6 oz strawberries cleaned, left whole
  • 3 tablespoons sugar
  • 2 teaspoons vanilla paste
  • 2 teaspoons balsamic vinegar good quality
  • 1 1/4 cups basil leaves
  • Juice of 1 1/2 limes
  • 2 tablespoons Demerara sugar
  • 1 tablespoon extra virgin olive oil

Instructions
 

Roast the Strawberries:

  • - Preheat the oven to 200°C (392°F).
  • - Place the strawberries on a baking tray, add sugar, vanilla paste, and balsamic vinegar. Mix well.
  • - Bake for about 1 hour until the strawberries become jam-like. Let them cool completely.
  • - Process the cooled strawberries slightly using a small food processor or a hand-held mixer.

Make the Base Vanilla Ice Cream:

  • - In a small bowl, mix 50g of whole milk with corn starch until smooth. Set aside.
  • - In a pot, combine the remaining milk, heavy cream, sugar, vanilla beans, and salt. Simmer while whisking.
  • - Add the corn starch and milk mixture, continue whisking, and simmer for 1 minute.
  • - Let the mixture sit at room temperature for at least an hour, then strain into a bowl. Cover and cool completely.
  • - Churn the ice cream according to your ice cream machine.

Make the Sweet Lime Basil:

  • - In a mortar & pestle, pound basil with Demerara sugar and juice of 1/2 lime until creamy.
  • - Add the remaining lime juice and olive oil. Mix until creamy.

Assemble the Ice Cream:

  • - Take the ice cream container from the freezer.
  • - Layer the ice cream in this order: vanilla base ice cream, lime basil emulsion, roasted strawberries. Repeat until all ingredients are used, finishing with the vanilla base ice cream on top.
  • - Use a knife to create zig-zags in the ice cream.
  • - Cover and freeze until solid.

Notes

Notes:
- You can make the roasted strawberries ahead and store them in the fridge for several days or freeze them.
- Allowing the cream mixture to cool with the vanilla beans enhances the vanilla flavor.
- The basil lime mixture may have small bits of basil, which is normal and won't affect the final texture.
